With a real truffle hunter. In a real forest. At a table you'll never forget.
500+ verified reviews · 4.9/5Deep in our private woodland with Levante and Ares — you'll find the truffle with your own hands, in the ground where it grows.
Lunch built around what you found: fresh truffle pasta, estate olive oil, and our own estate wine. At a table set the way it's done at home.
Tuscan wines paired with seasonal truffle — explained simply, poured generously. No ceremony, just pleasure.
How to clean it, store it, and use it. How to tell a real truffle from an industrial fake. The things you won't find in any guidebook.
You arrive at our historic estate in San Miniato — the capital of Italy's white truffle. We'll be there: us, Levante, Ares, and the smell of the forest already in the air. No signs. No crowds. Just you and a small group of lucky guests.
Through the olive grove and into our private woodland. Levante and Ares take off. Their noses go to work. You learn to read the signals: where truffles grow, why they grow there, how moisture and tree roots create an underground miracle.
One of them stops. You kneel down. Your hands go into the earth. Then it happens — the truffle comes up, and with it a scent you've never experienced: intense, earthy, alive. This is the moment our guests still talk about months later.
How to clean a truffle without ruining it. How to store it for five days without losing a gram of fragrance. How to tell a real truffle from an industrially scented fake. Francesca teaches what she knows because she's known it since childhood.
Back at the villa, Francesca takes over. Fresh truffle pasta grated at the table. Our own estate olive oil. Our own estate-produced wine. A table set the way it's done at home — not in a restaurant. And the silence of the hills around you.
"I don't sell an experience. I let you into something I've always done."
Francesca was born and raised near San Miniato, surrounded by these forests. She spent her childhood learning to read her dogs before she learned to read books — truffle hunting passed down through generations, not taught in classrooms.
She's not a tour guide. She's a truffle hunter who also happens to cook with extraordinary instinct. She leads the hunt through the woods, then returns to the villa kitchen to prepare a lunch that guests still talk about, year after year.
Levante and Ares — our two Lagotto Romagnolos, the Italian breed selectively bred for centuries for this exact work — are not props. They're the reason this works.
Trained by Francesca since puppyhood, they know every corner of our private San Miniato forest. They follow their noses, not instructions. When one of them stops and digs, he's right.
Our guests always mention them in reviews. Not because they're cute. Because watching them work, they understand: what they're experiencing is real.

It hasn't happened yet — but if it did, the experience doesn't change. Francesca knows these forests better than she knows her own kitchen. Some days you find two truffles, other days twelve. The unpredictability is part of what makes it real.
Yes, from age 6 upward. Children are usually the most excited during the hunt — Levante and Ares draw them in immediately. The lunch works for all ages. Just drop us a note before booking so we can adjust the menu if needed.

The prized white truffle (Tuber Magnatum Pico) is found October through January — San Miniato is Italy's capital for it. Black truffle (Tuber Melanosporum) runs December to April. Summer black truffle is available in warmer months. The experience is rewarding all year, but October and November are pure magic.
